Recipe File: Mini Cherry Tarts

Summer hasn’t been kicked off until the first cherries are in season. While the bright and shiny fruits make for an easy summer snack to simply eat out of a bowl, don’t be afraid to incorporate them into your favorite recipe.

Here’s a cherry-filled summer dessert to get started with: mini cherry tarts.

What you’ll need:

  • 1 pie crust (store bought or homemade)

For the filling…

  • 1 pound (3 cups) cherries, halved and pitted
  • 1/3 cup sugar (P.S. these are the cutest measuring cups).
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

For the crust:

  • Egg wash
  • 1/2 tablespoon Cane sugar or Turbinado sugar

Directions:

  1. Preheat the oven to 375 degrees F.
  2. For mini cherry tarts, separate your dough into 5 sections. Roll out into circles on a floured surface. (If you decide to make one large cherry tart, simply roll out your dough into a large circle and continue with the below instructions.
  3. In a large bowl, combine halved and pitted cherries with sugar, cornstarch and lemon juice.
  4. Transfer your circles of dough onto a greased baking sheet.
  5. Spoon your filling into the center of each circle, leaving about an inch and a half on the edge. (If you’re a crust-lover, leave about 2 inches of dough around the edge). Fold up the edges so your filling feels loved and is snug.
  6. Brush the edges with egg wash and sprinkle with sugar.
  7. Bake for an hour, or until the filling is bubbly and the crust is golden brown. Let cool then enjoy!

Homemade cookies are always a treat – the aroma wafting from the oven as buttery cookies cook never fail to brighten and warm a home, especially during the holiday season. So here’s a delicious raspberry thumbprint cookie recipe to try.

What you’ll need:

  • 1 cup butter (softened to room temperature)
  • 2 cups and 2 Tablespoons of all-purpose flour
  • 1 1/2 teaspoons vanilla extract
  • 2/3 cups sugar
  • Raspberry jam (or any flavor jam you prefer)

Directions:

  1. Using a mixer, soften the butter in a bowl until creamy.
  2. Add the sugar and vanilla to the softened butter. Combine well.
  3. Pour the flour into the mix. Combine until a soft dough is formed.
  4. Press the dough down to compact it and cover it with plastic wrap. Chill the dough in the refrigerator for about 3 hours (or, chill in refrigerator for 1.5 – 2 hrs then chill in freezer for 15 min).
  5. Preheat the oven to 350 degrees and begin rolling the dough into 1-inch balls. Place on a greased baking sheet. (Note: if the balls feel sticky and/or soft after rolling, place the dough back into the fridge for about 15 min or until the dough is firm).
  6. Make an indent with your thumb into each ball. If the dough ball cracks on the side, feel free to smooth it out with your fingers.
  7. Fill each indent in each ball with jam of your choice.
  8. Bake the shortbread cookies until the edges are slightly golden, around 14-15 minutes.
  9. Let cookies cool for about 30 minutes. Enjoy!

Recipe File: Apple Bread Pudding

If you’re in need of comfort food that is slightly sweet and completely delicious, this apple bread pudding recipe is calling your name.

What you need (for one 8 inch square pan):

  • 6 slices day-old bread (I used Sprouted Multigrain & Seed bread from Whole Foods)
  • 2 tablespoons butter, melted
  • 1 box (or 1 oz) raisins
  • 3 eggs, beaten
  • 2 cups milk
  • 3/4 white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup sliced apples

For the Vanilla Sauce:

  • 1/6 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1 – 1/3 cup water
  • 1.5 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon

Directions: 

  1. Preheat the oven to 350 degrees.
  2. Slice the bread into cubes.
  3. In a large mixing bowl, mix together the milk, eggs, sugar, butter, cinnamon and vanilla.
  4. Add the sliced bread cubes, sliced apples and raisins into the egg mixture. Slightly toss so that the bread cubes are coated.
  5. Pour the bread and egg mixture into a well-greased 8-inch square pan. With a fork, slightly push down on the bread and apples so that they are somewhat covered by the egg mixture.
  6. Bake in preheated oven for 40 minutes.
  7. While the bread pudding is baking, combine the sugar, cornstarch and salt in a saucepan.
  8. Stir in the water until the mixture is smooth.
  9. Bring to a slight boil over medium heat and stir for 2 minutes or until thickened.
  10. Remove from heat. Stir in the butter, vanilla and nutmeg. Serve with warm bread pudding.

Smoothies are quick to make, healthy and taste oh-so-good. Make yourself a refreshing kiwi strawberry smoothie for those hot spring/summer days.

Ingredients  (for 1 serving):

  • 2 kiwis (cut into chunks)
  • 1/2 cup strawberries
  • 1/4 cup tangerine (or orange) juice
  • 2 spoonfuls plain Greek yogurt
  • 1 teaspoon coconut oil

Put all the ingredients into a blender and blend until smooth!

Try avocado toast! (Yes, I’ve hopped onto the avocado toast trend and it’s totally okay). Not only does this quick meal take 5 minutes or less to make, but it’s also healthy and delicious.

What You’ll Need:

  • A really good and thick slice of bread. It’s all in the bread for avocado toast. Choose a thick piece of toast (a nutty whole grain is preferred, but a simple sourdough works great, too!) as the foundation.
  • Ripe avocados. The amount of avocados you use depend on how much avocado you want on your toast. I used half an avocado for one slice of sourdough for a semi-thin layer.
  • Lemon juice
  • Olive oil
  • A pinch of salt and pepper
  • A shake of red crushed pepper

Steps:

  1. Toast your bread! You can either choose to toast your bread first, then drizzle a little olive oil over it, or toast your bread in the toaster oven with a drizzle of olive oil.
  2. Mash your avocado(s) in a small bowl with 2-3 drops of lemon juice (for half an avocado) and a pinch of salt and pepper.
  3. After your bread is toasted, spread your avocado mixture on top.
  4. Shake a little red crushed pepper (again, to your liking) to finish it off.
  5. Enjoy!
